How To Make Stewart’s Favorite Slow Cooker Chicken Tacos

The tradition at our house is that when it’s your birthday Mom bakes your favorite cake and you get to choose if you want mom to cook your favorite dinner or if you want to go out.  Growing up, my son Stewart always asked me to make his all-time favorite dinner, Chicken Tacos. Thankfully it’s also one of the easiest meals in my arsenal of dinners to get on the table. It seriously takes more time to hit the drive thru to pick up taco’s than it does to make these at home. Five minutes in the morning to get the chicken going in the slow cooker and you’re guaranteed a fabulous meal at the end of the day that’s sure to please the whole family! There is nothing better than walking in the door after a long day and being greeted by the tantalizing aroma of these simmering away in the slow cooker!  Just thinking of it is making my mouth water!  I’m seriously getting a hankering for some Chicken tacos! Let’s make some already!!!

I honestly can’t remember where I first found this slow cooker recipe, it’s been in my arsenal forever, but it was a hit with my family from day one.  I’ve been making them for family and friends for decades. Everyone always asks for the recipe. Keep reading to see how ridiculously easy it is to make these!  

Place chicken in the slow cooker, sprinkle the taco seasoning over the top.  Add enough chicken broth to cover. 

No need to thaw chicken breasts if they are frozen.

Cook on low for 8-10 hours. 

My favorite slow cooker has cooked up a lot of chicken tacos over the years.

Shred chicken with a fork.

Place shredded meat on a corn tortilla and add cheese.

Serve each taco with your favorite taco toppings.

This recipe is also great for casual entertaining.  You can make everything in advance, set up a taco bar with assorted taco fixings and let everyone build their own tacos with the toppings they love the most.  Serve with Refried Beans and Spanish Rice to round out the meal.

TIP:  Cook extra meat so you can use leftovers as the base to make chicken nachos, chicken burritos, chicken taco salad, or chicken enchiladas.  Chicken nachos for dinner?  Maybe not all the time but why not?  After all, it’s just a deconstructed taco and your kids will think you are a super cool mom making them nachos for dinner!

  • Slow cooker

Ingredients
  

  • 3-4 large boneless, skinless chicken breasts
  • 32 oz chicken broth
  • 2 tbsp taco seasoning

Instructions
 

  • Place chicken breasts in the bowl of a slow cooker.
  • Add taco seasoning and chicken broth.
  • Cover and cook on low for 7-8 hours.
  • Shred chicken with a fork.
  • Place shredded chicken on a corn tortilla and top with all your favorite taco toppings; shredded lettuce, shredded cheddar cheese, chopped tomatoes, diced onion, chopped cilantro, sour cream, and salsa.
  • Enjoy!

Notes

Leftover chicken can be used to make delicious burritos, enchiladas, tostadas, and nachos.
