The Best Chicken Gyros You’ll Ever Eat

Sometimes I surprise even myself with a meal that is utterly outstanding! These chicken Gyros are not only easy to make, but the medley of Mediterranean ingredients and the spices in the marinade give them a gloriously delicious flavor profile. The soft Naan bread envelopes the tender, juicy bites of chicken and crisp, fresh veggies. Then it’s all topped with creamy Feta cheese crumbles and a fresh tangy Tzatziki sauce. It’s an explosion of fabulously delectable flavors in your mouth with each and every bite!

These Gyros are delicious using store bought Pita bread or Naan bread, and will save you loads of time but I strongly encourage you to make your own fresh Naan bread when making these Gyros. Try this Easy To Make Garlic Naan Bread recipe; it’s a great side with any meal or as a delicious dipper for your favorite hummus. The soft freshly made Naan bread takes these Gyros over the moon! If you have the time…make it!!! You’re going to be surprised at how easy it is to make your own Naan bread.

Round out the meal and serve up a side of Christina’s Heavenly Hummus. Scoop it up with your favorite veggies and any extra Naan or Pita bread. Simple, easy to make, and nutritious. This stuff it to die for!

Make the marinade for the chicken:

You can use frozen chicken, it will thaw overnight in the marinade.

Place the plain greek yogurt and minced garlic in a mixing bowl.

Add the lemon juice, lemon zest, and olive oil to the bowl.

Add the spices; Kosher salt, paprika, cumin, oregano, coriander, and black pepper.

This combination of spices gives these Gyros their fantastic flavor.

Stir to combine all the marinade ingredients.

Place chicken thighs in a large ziplock baggie and add the marinade to the bag.

Be sure to use chicken thighs not breasts for the best results.

Squeeze out the excess air, seal the bag, and smoosh the bag to make sure all the chicken pieces are coated with the marinade. Refrigerate overnight.

Cook the chicken:

Preheat BBQ grill to medium high heat. Grill chicken over direct heat for about 8-9 minutes per side, or until chicken is cooked thorough and the edges are crisp. 

Remove chicken from the grill and allow the meat to rest for five minutes.

Coarsely chop chicken meat with a sharp knife.

To serve Gyros:

Set up a Gyro station in the kitchen so everyone can assemble their Gyros the way they like them best.

Start by spreading a generous layer of Tzatziki sauce onto each Pita or Naan bread round.

If you have the time and inclination I highly recommend making your own fresh Tzatziki sauce. It comes together in just a few short minutes and the flavor will blow away anything you can pick up in the refrigerated section at the market. It’a an easy to make light, refreshingly delicious, cool, creamy cucumber sauce that pairs beautifully with all your favorite Mediterranean foods and it’s the perfect topping for these Chicken Gyros!

Top with some chopped chicken.

Top with veggies; cucumber, red onion, shredded lettuce, tomatoes and crumbled Feta cheese.

Drizzle with additional Tzatziki if desired to serve.

If you love Greek and Mediterranean foods you are going to LOVE these Gyros! Make your own fresh Naan bread and Tzatziki sauce if time permits. But if you don’t have the time or energy use some store bought Tzatziki and warm up some store bought Pita bread and then pile on the chicken, fresh veggies and Feta cheese. Ingredients
  

  • 2 lbs chicken thighs, can use frozen, no need to thaw them
  • ½ cup plain Greek yogurt
  • ¼ cup olive oil
  • 1 lemon, zested and juiced
  • 6 cloves garlic, minced
  • 2 tsp Kosher salt
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • ½ tsp coriander
  • 1 tsp black pepper
  • 6 rounds Naan bread or Pita bread, warmed
  • 1 cup Tzatziki sauce
  • 1 cucumber, peeled, seeded, and diced
  • 1 cup iceberg lettuce, finely shredded
  • 1 small red onion, chopped
  • 1 cup tomatoes, diced
  • 1 cup Feta cheese, crumbled

Instructions
