Round out the meal and serve this soup with a cheese quesadilla. It’s the perfect side, the creamy cheese is a great mild counterpart to the zesty robust flavors in this soup.
The base of this soup is a carton of healthy black bean soup. Even if you have someone in the family that isn’t a fan of beans, they will love this rich, creamy black bean soup. You will find the soup along with all their other soups at your local Trader Joe’s.
The addition of Chimichurri rice packs loads of flavor and gives this black bean soup a zesty punch of flavor and lovely texture. You can find it in the freezer section of the store.
The recipe calls for using a Jalapeño Chicken sausage, but you can easily substitute with a milder, less spicy option if you want a mellower soup. Pick your favorite sausage for the protein in this soup. Trader Joe’s has numerous options to choose from. Just be sure to select a sausage that is already fully cooked.
The hardest part of this recipe is cutting the sausage into diced pieces.
Combine all three ingredients in a large saucepan and heat over medium heat until nice and hot.
Ladle soup into bowls and top with a dollop of sour cream if desired.
