An Easy To Make, Delicious, Soft White Sandwich Bread

I know sour dough is all the rage right now, and rightly so…it’s absolutely delicious! But let’s get real for a minute, we don’t always have hours and hours to spend baking up a fresh loaf of sourdough bread. Sometimes I just want a soft white bread to whip up a gooey grilled cheese, a tuna sandwich or a PB&J. This loaf checks all the boxes. It takes about half the time to make as a sourdough loaf, it’s soft and airy, and it’s absolutely perfect for whatever sandwich you’re craving. Any slices that aren’t eaten the day this loaf is baked are delicious toasted and slathered with butter and your favorite jelly.

This bread is a yeast bread that uses commercial yeast instead of a sourdough starter. One of the benefits of making your own bread is that you control exactly what ingredients go in it; no preservatives or chemical additives. Not only is it a healthier option than many of the loaves on the supermarket shelves, it will cost you just a fraction of what you pay at the store. When did bread start costing almost $7.00 a loaf? This loaf will cost you less than $2.00 to make. It’s easy to make, tastes great, it’s better for you, and it’s economical too…like I said it checks all the boxes. So what are we waiting for? In a small bowl stir together warm water, yeast and sugar. Set aside for 5 minutes.

While the yeast activates, combine flour, vital wheat gluten, and salt in a large bowl .

Why use vital wheat gluten? High protein bread flour produces the lightest airy loaves of bread. All Purpose Flour tends to have a lower percentage of protein. Adding a teaspoon vital wheat gluten for every cup of APF increases the protein and gluten content producing the same results as using bread flour.

Once yeast water is foamy add it to the bowl with the flour mixture.

Add 2 tablespoons olive oil to the bowl.

Use a wooden spoon or Danish whisk to stir dough together until you have a sticky consistency and the dough starts to pull away from the sides of the bowl. 

Knead the dough for 7 minutes, either by hand on a floured work surface or with a stand mixer using the dough hook attachment.

Roll the dough into a ball.

Place dough ball in an oiled bowl and cover with a towel.

Allow dough to rise for 1 hour. Dough should double in size.

Place dough onto a floured work surface and knead by hand for 1 minute.

Shape dough into a loaf shape and place it in an oiled loaf pan.

Cover loaf pan with a towel and allow dough to rise for 1 hour. Loaf should double in size.

Preheat oven to 375℉.

Bake loaf in preheated oven for 30-35 minutes or until golden brown.

Remove from oven and allow loaf to cool completely before slicing.

  • tsp active dry yeast
  • 2 tbsp sugar
  • tsp Kosher salt
  • 2 tbsp olive oil, plus extra for oiling
  • 3 cups plus 2 tablespoons all purpose flour,
  • 3 tsp vital wheat gluten

Instructions

  • 6½ cups flour
  • 6 teaspoons vital wheat gluten
